Intensely coarse and tough with diverse colour pigments in there, reflecting the different parts of the pig I’m chomping on, all encased by a good half inch of jelly, with just enough depth for me to just about get my gob around. It has a splendidly spicy kick to it and a delicate peppery aftertaste
