AJ Boon's Pork Pie

I take this pie home and stick in the oven. The pastry looks a bit more shortcrust than water based and curiously the crust lid doesn't quite cover the pie giving you a tantalising teaser of what lies beneath with meat and jelly poking through. The meat is coarse and very pink but there's a lot of it and has been squared off inside rather than opting for the ice cream scoop approach. It's encased in a tasty jelly which partially dissolves in the oven. The meat is a bit chewy but highly savoury and augmented perfectly with runny jelly and spice giving the tastebuds a great hit.
